Snowmen Cookies for the Snowy SB

In honor of the potential snowy Super Bowl, how about bringing these adorable cookies (thanks Martha Stewart) to the Super Bowl party?  You can even jazz em up with team colors or serve them on team plates or napkins!

  • ½ cup shortening
  • ½ cup peanut butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1/8 tsp. baking soda
  • 1 egg
  • 3 tbsp. milk
  • ½ tsp. vanilla
  • ¼ cup unsweetened cocoa powder
  • 1 ½ cups all-purpose flour
  • 16 ounces vanilla-flavored candy coating, coarsely chopped
  • 20 bite-size peanut butter cups, unwrapped
  • 40 brown mini Hershey kisses
  • 20 orange sprinkles

1)   Preheat oven to 350.

2)   In a large bowl beat shortening and peanut butter with an electric mixer on high speed for 30 seconds.  Add granulated sugar, brown sugar, baking powder, salt, and baking soda.

3)   Beat until combined, scraping sides of bowl occasionally.  Beat in egg, milk, and vanilla until combined.  Beat in cocoa powder.  Beat in as much of the flour as you can with the mixer.  Stir in any remaining flour.

4)   Divide dough into 20 portions, shape into balls.  Place balls 2 inches apart on an ungreased cookie sheet.

5)   Bake for 9 to 11 minutes of just until edges are firm.  Cool on cookie sheet for 2 minutes.  Transfer to wire rack to cool.

6)   In a medium microwave-safe bowl microwave candy coating on 50% power (medium) for 2 ½ to 3 minutes or until melted, stirring every 30 seconds.

7)   For snowmen, place cookies on a cootie sheet lined with waxed paper.  Spoon melted candy coating onto each cookie to resemble melting snow.

8)   While coating is still tacky, add peanut butter cup as the hats and small Hershey kisses for the eyes and the sprinkle for the nose.

9)   Let stand until coating is set.

Makes 20 cookies and be sure to store cookies in a single layer in an airtight container.  Store at room temp for 3 days or in the freezer for 3 months.
