A couple of weeks ago I interviewed ESPN’s Jaymee Sire. I knew she would have some killer recipes since she does have a food blog, but what I didn’t expect was to have my college nostalgia piqued by the mere mention of Jell-O shots. Jaymee casually mentioned that she has an entire tab dedicated to the campus favorite. Per her recommendation I wanted to try the Ruby {Red Zone} Greyhound Jell-O shots.
Ingredients:
- 3 large grapefruits
- 5 to 2 packets of Knox unflavored gelatin (Use 2 packs for a firmer shot)
- ¼ cup sugar
- 1/8 teaspoon cherry Jell-O or 1 drop pink food coloring (for pink color)
- ¾ cup vodka (try Absolut Ruby Red)
- ¼ cup cold water
Instructions:
- Carefully juice enough grapefruit to yield 1 cup of juice, strain any pulp and seeds.
- Hollow out each half, taking care not to puncture the peel.
- Place the hollowed-out halves in a muffin tin to stabilize them.
- Pour juice into a saucepan and add Knox unflavored gelatin.
- For color, add the 1/8 tsp. cherry Jell-O or pink food coloring.
- Let it soak for a minute or two then add ¼ cup of sugar and heat until the gelatin and sugar have dissolved (about 5 minutes).
- Pour in vodka and water and then transfer to something with a pouring spout (such as a liquid measuring cup) to make for easier filling.
- Pour the mixture into your halves and refrigerate for several hours or overnight. Once the Jell-O is completely set, use a sharp knife to slice the wedges in half again, then in half again.
