Football season is right around the corner and so are the tailgates and watch parties.  Whether you are a master of the pit, or need a quick something for a watch party, I’ve got something for you and it’s doozie! Enter my Jalapeno Queso Sliders! They are cheesy, they are spicy and about three – maybe four – bites max. They are perfect for a tailgate and watch party! This recipe is so quick and easy you will have more time to spend with your guests because let’s face it…no one wants to be in the kitchen all day.

What you need:

16 oz box Velveeta Cheese – (Serves about 4 people. Feeding a crowd? Grab two or three boxes!)

1 can Rotel diced tomatoes and green chilies

3 large fresh jalapeno

Avocado (optional)

Pickles (optional)

Lettuce (optional)

Slider Patties – I used Kroger’s Private Label to make it easy.

First Up

Make your queso the morning of. I used a crockpot and heated all of the ingredients on low. Cube your Velveta so it melts quicker, and place in the crockpot. Melt the cheese down and add in can of Rotel. **Note: you may not need the whole can depending on how much queso you are making. You can use 1/2 a can for 16 oz.** Dice one whole jalapeno and add into queso mixture. Remember to stir the queso occasionally so that that everything blends together and nothing sticks to the edges.

Get to Slicing!

Slice the other jalapenos to garnish on the sliders for those that want a little (okay a lot) more heat! Slice avocado and tomato to help cool down that temperature.

Grill!

Grill your patties. Are you cooking inside on the stove? My favorite pan is the Calphalon grilling pan. It’s a life saver! Get it from Bed Bath and Beyond and don’t forget your coupon! 🙂

The Kroger Private Label comes with 12 patties. Go ahead and assume guests will eat 2 sliders or may want to make doubles (I did two double sliders, but shhh – that’s between us!). It is safe to say that one box will feed at the least 3 people, and at the max 12.

While things are grilling, set up an assembly line for your sliders, and you’re basically ready to serve. Let the queso be the last thing people put on their sliders! Serve with chips, tater tots, or I’ve got an even better idea – let your guests make tatchos with the queso and tater tots! Now that sounds delicious!
