Who doesn’t love a good chocolate soufflé? Well we found a low-calorie recipe that will have you totally fooled. Not to mention, they come in personal sizes…perfect for sharing and tailgating of course!

Ingredients:
- 6 ounces semisweet chocolate, chopped
- ¼ cup vegetable oil
- 3 large eggs
- 6 tbsp. granulated sugar
- ½ tsp. vanilla extract
- ¼ tsp. salt
- 4 tsp. all-purpose flour
- 2 tbsp. confectioners’ sugar
Preparation:
1) Preheat oven to 350 degrees.
2) Line 24 mini muffin cups.
3) In a large heatproof bowl, combine chocolate and oil. Place bowl over a pot of simmering water and let stand until chocolate is melted. Stir until smooth; set aside.
4) Using an electric mixer set to medium speed, whip eggs and sugar until pale and thickened slightly, about 6 minutes.
5) Using a rubber spatula, stir in chocolate mixture, vanilla extract, salt and flour until smooth.
6) Spoon batter into prepared muffin cups.
7) Bake until cakes are puffed up and set on top (6 to 8 minutes). *cakes will fall slightly as they cool.
8) Cool 5 minutes, then carefully remove cakes from muffin cups.
9) Allow to cool completely, then dust with sifted confectioners’ sugar.
10) Enjoy!
