Game day is chock full of football, fun, and calories. Wings and beer and carbs, oh my! But it doesn’t have to be that way. Read on below to follow our yummy Buffalo Lettuce Wrap recipe, which is basically a fancy spin on greasy fried wings. All you need is a crockpot and some hot sauce. You can make them as spicy or mild as you’d like- and if you’re not too concerned with the low calorie aspect, feel free to add blue cheese or ranch. And don’t worry about making too much: leftover buffalo chicken makes an awesome dip!

Game Day Buffalo Lettuce Wraps:

Ingredients:

  • 24 oz boneless/skinless chicken breast, whole
  • 2 celery stalks, whole
  • ½ onion, diced
  • 2 cloves garlic, whole
  • 16 oz low sodium chicken broth
  • pinch of cayenne pepper
  • 6 large lettuce leaves
  • 2 cups shredded carrots
  • 2 cups diced celery
  • 1 bottle Frank’s Red Hot sauce

Preparation:

1) Combine following ingredients in crock pot and cook on HIGH for 4 hours:

  • 24 oz boneless/skinless chicken breast, whole
  • 2 celery stalks, whole
  • ½ onion, diced
  • 2 cloves garlic, whole
  • 16 oz low sodium chicken broth
  • pinch of cayenne pepper

2) Then, remove contents of crock pot and strain. Save only ½ cup of the broth. Discard celery stalks and garlic cloves.

3) Shred chicken breasts with two forks. Combine chicken and onions back into crock pot with ½ cup of broth and add ½ cup hot sauce.

4) Leave in crock pot for another 30-45 minutes on HIGH. For extra spice, add a few squirts of Srichacha.

5) Add buffalo chicken to lettuce leaf, topped with shredded carrots, diced celery, and your choice of blue cheese or ranch (or neither!).

6) Enjoy!

 

Serving: 6 people per ½ cup chicken
