Chicken Pot Pie<\/p><\/div>\n

Ingredients for the filling:<\/strong><\/p>\n

• Cooking spray<\/li>\n
• \u00be teaspoon salt<\/li>\n
• \u00bd teaspoon ground black pepper<\/li>\n
• 1 \u00bd pounds boneless, skinless chicken breasts, cut into \u00bd-inch chunks<\/li>\n
• 4 teaspoons olive oil<\/li>\n
• 1 medium onion, chopped<\/li>\n
• 2 medium carrots, chopped<\/li>\n
• 2 celery stalks, chopped<\/li>\n
• \u00bd pound green beans, trimmed and chopped into \u00bd-inch pieces<\/li>\n
• 2 cloves garlic, minced<\/li>\n
• 1 \u00bd cups low-fat milk<\/li>\n
• \u00bc cup all-purpose flour<\/li>\n
• 1 cup low-sodium chicken broth<\/li>\n
• 1 cup peas, thawed if frozen<\/li>\n
• 1 \u00bd tablespoons fresh thyme leaves<\/li>\n<\/ul>\n

  Ingredients for the biscuit crust:<\/strong><\/p>\n

  • \u00bd cup whole-wheat flour<\/li>\n
  • \u00bc cup all-purpose flour<\/li>\n
  • \u00be teaspoon baking powder<\/li>\n
  • \u00bc teaspoon baking soda<\/li>\n
  • \u00bc teaspoon salt<\/li>\n
  • 3 tablespoons cold unsalted butter, cut into small pieces<\/li>\n
  • 2 tablespoons canola oil<\/li>\n
  • \u00bd cup low-fat buttermilk<\/li>\n<\/ul>\n

    Preparation:<\/strong><\/p>\n

    1) Preheat the oven to 375 degrees F. Grease a large shallow casserole dish with the cooking spray.<\/p>\n

    2) Season the chicken with salt and pepper.<\/p>\n

    3) In a large nonstick skillet, heat 2 teaspoons of the oil over a medium-high heat.<\/p>\n

    4) Add the chicken to the pan and cook for 5 minutes, stirring occasionally.<\/p>\n

    5) Transfer the chicken with its juices to a bowl.<\/p>\n

    6) Add 2 more teaspoons of oil to the same pan and heat it over a medium-high heat. Add the onions, carrots and celery and cook until the vegetables begin to soften. (About 3 minutes)<\/p>\n

    7) Add the green beans, garlic and remaining salt and pepper and cook for 2 more minutes.<\/p>\n

    8) Add the milk.<\/p>\n

    9) Stir the flour into the broth until it is completely dissolved and add to the pan.<\/p>\n

    10) Cook, stirring, until the mixture comes to a boil.<\/p>\n

    11) Reduce the heat to medium-low and cook for 2 more minutes. 12) Return the chicken with its juices back to the pan.<\/p>\n

    13) Add the peas and thyme and stir to combine.<\/p>\n

    14) Season with salt and pepper, to taste.<\/p>\n

    15) Spoon the mixture into the baking dish or individual dishes.<\/p>\n

    16) Next, to make the crust, put the whole-wheat flour, all-purpose flour, baking powder, baking soda and salt into a food processor and pulse a few times to combine.<\/p>\n

    17) Add the butter and pulse about 12 times, or until pebble sized pieces are formed.<\/p>\n

    18) Add the buttermilk then oil to the food processor and pulse until just moistened. Do not over mix.<\/p>\n

    19) Drop the batter in 6 mounds on top of the chicken mixture spreading the batter out slightly.<\/p>\n

    20) Bake until filling is bubbling and the biscuit topping is golden brown. (About 20 minutes)<\/p>\n

    21) Enjoy!<\/p>\n
