Ok ok, red velvet cake is good any day, I agree. But why not change things up and serve this bad boy up for your next game day party, tailgate or even for opening day since that’s just around the corner! I found this super yummy recipe from my go-to on sweets, Paula Deen.
Yes I made this one for Valentine’s day but shaping it was so much easier than expected. First off let’s make some cake:
Ingredients for the Red Velvet Cake:
Cake Preparation:
- Preheat oven to 350 degrees F and grease and flour 3 (9-inch) round layer cake pans.
- Sift flour, baking soda and coco together.
- Beat sugar and eggs together in a different large bowl.
- In a separate bowl mix together oil, vinegar, food coloring, and vanilla and add to the bowl of eggs and sugar and beat until combined.
- Add the flour mixture and the buttermilk to the wet mixture by alternating the buttermilk and dry ingredients, starting and ending with the dry ingredients.
- Pour batter into pans and bake for 25 minutes or until a toothpick inserted near the middle comes out clean but be careful not to over bake or you’ll end up with a dry cake.
- Let layers cool on a wire rack for about 10 minutes before removing from the pan.
- Cool completely before shaping and frosting.
Once they are cool, I just used a long sharp knife to shape this particular cake into a heart by doing one layer then using it as an outline on the other cakes. You could easily shape it into a football or hockey jersey. There are also cute stencils you can print out to decorate the cake.
While the cakes are cooling, whip up the frosting (see what I did there).
Cream Cheese Frosting Ingredients:
Preparation for Frosting:
- Let margarine and cream cheese soften to room temperature. Cream well.
- Add sugar and beat until mixed,
- Add vanilla. Spread between layers and on top and sides of cake.
I found this video that really helps with how to ice a cake if you need some guidance (I DID!)
And just so you know I went fist first, literally into this cake so I can verify that it is delicious and sure to please any crowd.
Plus the coolest thing about a cake recipe is you can do any shape, cupcakes, mini cupcakes or anything else. Tag me in your creations with #thesportsbrat and #tailgatetreats. I’d love to see them!
